Dried Mangos


Now in Kediri and starting a new position in Quality Control, I am learning how to make dried mangos.
These are Podang mangos!  The green ones will be ready in a few
days, but the yellow one is ready to eat (or be made into dried
mango slices).  On the right are Aru Manis mangos getting
washed up before being peeled.


Here's some shots of the peeling and slicing process.  I've joined in
a few times to get a feel for it, but I'm much slower than these ladies.



After some blanching and osmotic dehydration, the
mango slices are ready for the "oven"/dehydrater.  The
ladies are laying the slices out on trays to be put on racks
that will dry in the oven for about half a day.




Fresh from the oven!  Not Grandma's cooking, but these dried
mangos are tasty!  After some inspection above, the ladies
will remove them from the trays.
